Ok, its Friday, lets talk food without the sound effects!
Any great recipe you're tried lately, somewhere you've eaten, something you want to try?
I wanted cookies the other day, but didn't have any eggs. Made these with butter pecan cake mix and they are AMAZING! For anyone that follows me on IG....better then they looked!

I'm going to sound like such a house-wife groupie but.... do any of you have the instant pot? I have one and like it so far, but already needing more tried and true recipes! I eat hard boiled eggs like candy and it's worth it for that alone!

This time of year, I love nothing more than a bowl of warm, delicious soup. A couple weeks ago, I was looking through some cookbooks (yes, I use cookbooks ) and I saw a recipe similar to a soup I used to get many moons ago at Byerly's in Minnesota. I don't know if Byerly's is even open anymore and I'm now in the East Coast, so it gave me major nostalgic moment. I googled Byerly's Wild rice soup and I found the exact recipe! I made this last weekend and it is heaven in a bowl.
I did replace the ham with 2 cups of cooked chicken, cubed.

Victoria - The Instant Pot is an electric pressure cooker. All the rage on pinterest and in mommy groups LOL It is actually very handy and quick.

Also, you guys.... homemade marshmallows. Deceptively easy, and really impressive to those who don't know. If you can boil things, use a thermometer, and use a stand mixer/KitchenAid, you can do it. This ( ) is a good recipe (for non-peppermint marshmallows, sub the mint extract for vanilla). Otherwise there are tons of variations on Pinterest.
Last one, and my current obsession: pancakes! I make a big batch, freeze on a parchment-lined cookie sheet, and then transfer to a zip-lock bag. They're great in the microwave (for fluffier) or toaster!

So here’s a tricky one. I’m currently dairy and soy free. Does anyone have any really good recipes/ideas that don’t have either ingredient? I’ve done it before and was able to come up with meals all the time but I’m hitting a road block.

I heat olive oil, add garlic, then a big spoon of peanut butter. Once melted, add soy sauce. Cook glass noodles and add to sauce. I throw in peanuts, top with garlic chili sauce and lime juice. Its my quicky fake pad thai. Can add veggies, meat, cooked egg, tofu as well.

For soy/dairy free, try the Veganomicon. All the recipes can be found online and my favorites are Midsummer Corn Chowder, Broccoli Potato Soup, Red Lentil-Cauliflower Curry, Pasta Della California, Spinach Linguini with Basil Cilantro Pesto and Artichokes and Potato and Kale Enchiladas. And yes, the pesto is dairy free. If I had a chef I might just be vegan, it’s so good!

It sounds odd, its like crack though. The perfect mix of crunchy and soft, hot, sweet with the pop of lime juice! Best part, I can walk in the door and boil water, change, add noddle's, make sauce and its done when noodles are done. Dinner in under 10 minutes and its relatively healthy.

Yes I believe the recipe had sesame oil and possibly rice wine vinegar in it but very similar to FKF's, it's sooo yummy. I made it with linguine or angel hair pasta, shrimp and added shredded napa cabbage, shredded carrots, snow peas, bamboo shoots, green onions and cilantro. 😋
Can't find my recipe book right now but if I come across it, I'll post the actual recipe

I need snack food help! Normally I'm in late from work, have dinner and am good. Nights like tonight though, I was home just after 5, ate (scrambled eggs and toast so not crazy filling) and now I want to snack. I rotate between crispy minis, lime or jalapeño tortila chips, pretzels and sunflower seeds becUse they're all pretty low in sugar, I need some new ideas though!

Salami and cheese, or cheese and crackers is always good. Also, my friend is super into eating healthy turned me on to nutritional yeast. It's a powder you can put on/add to all sorts of food, but she puts it on popcorn. It's really good, even my junk food eating self loves it! I don't know how to explain the flavor- it's definitely savory, sort of cheesy/nutty. She uses this one but I got mine at Trader Joe's (the one on Amazon is HUGE and would take me a year to use- the one at TJ's is smaller and only $1.99).
Idk if you have Trader Joe's in Canada or not, but they have a lot of really good yogurt-based dips that I like with pita chips or celery/carrots.

If you like eggs, you could hard-boil a dozen (or whatever) so they're ready to go in the refrigerator. I actually picked that tip up from Taylor back in the day!

Greek yogurt is really good as a dip with chips or veggies. I mix low-fat greek yogurt (you can do non-fat, but it tastes different in my opinion) with the ranch dressing spice packets and it's a healthy and tasty treat

Any kind of dip with cream cheese you can sub greek yogurt. It might be slightly different, but it's way healthier. Syggi's is the best because it is thicker and has a more similar texture.

Oh that's a great idea!!! I use low fat sour cream, a block of frozen spinach and a Knorr veggie soup pack for spinach dip, but sort of tired of that. Does anyone have a great hummus recipe? I picked up tahini that other day on a whim because its been hard to find when I went looking for it.

Have you ever tried edamame hummus? It is my fav. I made it a long time ago and it was really good, but can't remember which recipe I used.
Also similar to hummus (but not putting your tahini to use), I often make pureed white bean dip with rosemary, garlic, lemon and a bit of olive oil. You just blend it all together and it is really good on bread. Here is a recipe if you are interested

I was googling looking for dinner ideas and found this guys blog. He swears by frozen bread for grilled cheese. I just tried it and wow! I did cover it with a pot lid, but it's so fluffy and the cheese was so melty. He says butter, I think it gets crispier with Pam so did that, but it was good! I just used cheddar, but want to try some of his flavours!

I LOVE grilled cheese! I'm going to try this. My favorite way to make it is with sourdough and extra sharp cheddar.
The timing is a little off for our Canadian friends, but does anyone have great Thanksgiving recipes they'd like to share?
